Corn flour for making tortillas. Each colour flour is milled from its corresponding variety of corn (white, yellow, blue) and laced with a tiny bit of lime.
The white flour is similar to your plain flour tortillas, the flavour is subtle but it gives you that course texture you only get from real masa harina. Yellow flour has a stronger corn flavour than the white flour and is probably the most popular of the three. The blue flour has the strongest flavour of the three and requires a little more water when mixing.
